That is a roast, not a steak. Nothing they did with that roast is wrong, probably tastes really good. I question putting pepper on it before searing, but that is a personal choice more than anything, some people like the taste of burned pepper.

as long as it all got eaten, I don’t think you can call it wasted. That meat looked far too lean for a good steak anyway. I saw no marbling. I would have skipped the radish and jalapenos but otherwise that looks like yum to me.
